My favoritest chocolate chip cookie recipe

What can I say?  I'm an old-fashioned girl after all, and I love few things as much as good ol' chocolate chippers.  We've been making these as long as I can remember.  My mom made them by the dozens when I was growing up, but with Crisco (ew!) and margarine (double ew!) instead of butter (tasted good then, but would be weird now.) 

I've modified the recipe a little to my own personal non-raised-in-the-post-depression-era tastes.  Yay for butter!!!

I should add that the cookie baking frenzy was brought on by the meeting of new neighbors and the freshly born babe down the street.  I initially thought "I have a cold coming on, and a ton of work to do, and the house is a mess, and it's sunny and warm outside" (which is just absolutely UNHEARD of this time of year in the Northwest.  Normally it's depressing and rainy and has me longing for a move to San Diego or some such place...), but then I thought, "I would love it if a neighbor brought ME cookies, and no, that would not be weird in this day and age."  And so it has been done.  And they liked the cookies.  See.  I am too a people person.  Way to go, me.

Chocolate Chip Cookies

1 cup of unsalted butter, softened
1 cup of organic, unbleached sugar
1/2 cup of light brown sugar
2 large eggs
2 teaspoons vanilla
2 cups of unbleached flour
1 1/2 teaspoons sea salt
1 teaspoon soda
2 cups chocolate chips (I prefer Ghiradelli)

Preheat the oven to 375 degrees.  Beat butter and sugar until light and fluffy.  Add brown sugar, eggs and vanilla and beat to combine.  In a separate bowl, sift together dry ingredients (except the chocolate chips!) and mix with butter/sugar mixture.  Stir in chocolate chips.  Drop by the tablespoonful onto baking sheet and bake for 9-11 minutes.  Makes lots.
